# Blackberry muffins
|
||||||
|
|
||||||
|

## Ingredients
|
||||||
|
|
||||||
|
- 400g/14oz plain flour
|
||||||
|
- 175g/6oz caster sugar
|
||||||
|
- 1 tbsp baking powder
|
||||||
|
- grated zest of 1 orange
|
||||||
|
- 1/2 tsp salt
|
||||||
|
- 85g/3oz butter
|
||||||
|
- 2 eggs
|
||||||
|
- 285ml buttermilk
|
||||||
|
- 250g/9oz blackberries (or a mixture of other berries)
|
||||||
|
|
||||||
|
## Directions
|
||||||
|
|
||||||
|
1. Preheat the oven to Gas mark 6/200°C/180°C fan.
|
||||||
|
2. Butter a 12-hole muffin tin.
|
||||||
|
3. In a large bowl mix the flour, sugar, baking powder, orange zest, and salt.
|
||||||
|
4. Melt the butter into a seperate bowl.
|
||||||
|
5. Add the eggs to the butter and beat them.
|
||||||
|
6. Add the buttermilk and optional lemon juice to the butter.
|
||||||
|
7. Make a well in the dry ingredients bowl, and pour the wet ingredients in.
|
||||||
|
8. Mix them until the ingredients are combined but not stiff. Don't overmix them.
|
||||||
|
9. Pour in the blackberries and fold them into the mixture.
|
||||||
|
10. Pour the mixture into the tin.
|
||||||
|
11. Bake for 20-25 minutes.
|
||||||
|
