# 40 clove garlic pressure cooker chicken
|
||||
|
||||

||||

## Ingredients
|
||||
|
||||
- 4 to 6 chicken thighs
|
||||
- 2 tbsp. olive oil
|
||||
- 40 whole garlic cloves (3 to 4 heads)
|
||||
- 1/2 tsp. red-pepper flakes (optional)
|
||||
- 100ml white wine
|
||||
- 1 tbsp. white wine vinegar
|
||||
- 2 cans (800g) cannellini beans, drained
|
||||
- 1/2 tsp. thyme
|
||||
- 1/2 lemon
|
||||
- 2 scallions thinly sliced
|
||||
- 1 tsp. parsely
|
||||
|

## Directions
|
||||
|
||||
1. Season the chicken with salt and pepper. Heat the oil in the pressure cooker on medium-high heat, sear the chicken skin-side down until browned (6 to 8 minutes) then remove.
|
||||
2. Saute the scallions until soft, then add the garlic and stir until softened, then add the pepper flakes, after 30 seconds deglase with the wine and vinegar, scraping off the brown bits.
|
||||
3. Add the beans, thyme and parsley and stir, season with salt and pepper. Put the chicken thighs on top, skin-side up, and cook on high heat and pressure for 12 minutes.
|
||||
4. Turn down the heat and allow the pressure to reduce for 10 minutes, then release the rest manually. Squeeze the lemon juice over the chicken then serve.
