- 350g (~12 oz) wheat flour
|
||||
- 1 sachet (~ 4g / 0.14 oz) baker's yeast
|
||||
- 1 teaspoon baking powder
|
||||
- 200g (7 oz) sugar
|
||||
- 20cl (~ 0,05 gal) water
|
||||
- 1 teaspoon sunflower oil
|
||||
- 250g (~ 9 oz)red beans Azuki (soak 24h before recipe)
|

- 6 baking paper square 7x7cm (~ 3x3inches)

1. 24h after soaking, boil the beans during 5 minutes and rince to clean up impurities.
|

2. Bring back the beans to simmering point during 1h30/2h. Drain when beans are easily squashable.

3. Mix the beans until smooth paste. Feel free to ad some water if necessary.
|
||||
4. Put the bean paste in a low-heated pan with 150g (~ 5oz) sugar and a pinch of salt. Stir continuously to dry up the paste during around 10 minutes and let it cool.

5. In a salad bowl, stir the flour, the rest of sugar (~ 50g / 1.7oz), a pinch of salt, the baking powder and baker's yeast.
|
||||
6. Knead the bun paste during 5 minutes then incorporate the oil, knead again during 2 minutes. Shape a bowl and let it for 1 hour.

7. Shape 6 balls with red beans paste.
|
||||
8. Press the rested bun paste to remove the gas and knea it up for 1 minute.

||||
9. Sprinkle flour on working plan and make a sausage shape. Cut it in 6 equal shares and shape small balls with it.

10. Spread these bun paste balls to obtain a 10/12cm (~ 4inch) diameter disc.
|
||||
11. Put the red bean paste in the center of the bun disc paste and close up the bao by making small folds around the ball. Solder well.
|
||||
12. Dispose baos in a covered steaming basket and let it rest during 10 minutes.
|
||||
13. After 10 minutes of rest, steam it during 20 minutes. After steaming, let it rest during 5 minutes without uncover it.

- 200g Flour (full sight)

- 100g Butter or Margarine
|

- 5 Tablespoons of Water

- 200g of Ham (alternatively cooked ham)

- 1/4 Cream

- 125g grinded Edamer Cheese

- For the Baking Tin: More Butter and Flour

## Directions

1. Spread some butter on a 26cm Ø or two smaller baking tins and cover it with flour

2. Sieve the flour, mingle the butter/margarine in small flakes.

||||
4. Form a depression in the middle of the flour and add spoons of water.

5. Mix all ingredients by hand until the dough becomes a homogenious mass.
|
||||
6. Wrap the dough in aluminium foil and let it rest in the fridge for two hours (around -4 °C).
|
||||
7. Preheat the oven at 200°C.
|
||||
8. Spread the dough on a flour-covered surface. Roll it until it has a thickness of around 4mm. Form a crust on the sides.
|
||||
9. Use a fork to prick the dough for a more thorough heat penetration.
|
||||
10. Cut the ham in slices and distribute them evenly on the dough.
|
||||
11. Divide the yolk from the egg white.
|
||||
12. Whisk the yolk with cream.
|
||||
13. Add the grinded cheese.
|
||||
14. Whisk the egg white until it becomes foamy. Add it to the yolk-pepper-salt-cheese mixture.
|
||||
15. Cover the ham in the baking tin with the mixture. Equalize the surface.
|
||||
16. Bake the Quiche in the oven on the middle rail for 30 minutes.
|
||||
17. After baking leave it to rest for a few minutes, then serve while it's still warm.
|
||||
I recommend serving it with a glass of white wine.

A delicious spicy pasta dish, super easy to make. I'm a student and it's relatively cheap for how much food you get. I found it in a newspaper a while back and thought I'd share it with you guys because it's my favourite meal. I also like to drink the excess red wine while cooking which adds to the enjoyment of cooking.

- 2 red onions, chopped
|
||||
- Olive oil
|
||||
- 6 spicy Italian sausages

- 1 sprig rosemary, needles finely chopped

- 1 red chilli, deseeded and diced
|
||||
- A large glass of red wine (approx. 250ml)
|
||||
- 2 x 400g tins chopped plum tomatoes
|
||||
- 300g pasta, preferably penne
|
||||
- 50g parmesan
|
||||
- 300ml double cream
|
||||
|
||||
## Directions

|
||||
1. Fry red onions with a splash of oil in a deep frying pan. Add the sausage meat (discarding the casings if need be). Add the rosemary and chilli
|
||||
2. Increase the heat and break up the sausage meat with a wooden spoon. Once meat has browned, pour in red wine and reduce by half. Add the chopped tomatoes and reduce the sauce, uncovered, for about 30 mins. Cook the pasta according to packet instructions.
|
||||
3. Grate the parmesan into a bowl. Drain the pasta and stir into the sauce with the parmesan, double cream and some seasoning.
|
||||
4. Serve :)

9. Loosely roll some of the mixture into a ball in your hand and place onto a plate and press softly to form a bowl shape, add egg yolk to indentation.

10. Serve, you may now add salt and pepper as desired.
