It's a staple at parties and gatherings and is often served with grilled meat or fish. - ⏲️ Prep time: 15 min - 🍳 Cook time: 45 min - 🍽️ Servings: 4 ## Ingredients - 1 cup long grain rice - 2 tablespoons vegetable oil - 1 onion, finely chopped - 3 cloves garlic, minced - 1 jalapeno pepper, seeded and minced (optional) - 2 teaspoons ground cumin - 1 teaspoon ground coriander - 1/2 teaspoon ground paprika - 1/2 teaspoon ground turmeric - 1/2 teaspoon salt - 1 (14.5-ounce) can diced tomatoes - 2 cups water - 1 cup tomato sauce - 1/4 cup chopped fresh cilantro (optional) ## Directions 1. Heat the oil in a large pot over medium heat. 2. Add the onion, garlic, and jalapeno (if using) and cook until the onion is translucent, about 5 minutes. 3. Add the cumin, coriander, paprika, turmeric, and salt and cook for 1 minute, stirring constantly. 4. Add the tomatoes, water, and tomato sauce and bring to a boil.
