Ingredients
- 200g pasta
- Olive oil
- 1/2 Onion, 1 carrot, 1/2 cellery
- 1 can of diced tomatoes
- Grated Parmigiano Reggiano or Pecorino Romano
Directions
- Add water to a large pot and bring it to a boil.
- Cut the onion, carrot and cellery to make the soffritto.
- Once the water is boiling add table spoon of salt.
- Cook the pasta according to packet instructions
- Put olive oil in the pan and cook the onion, carrot and cellery.
- Add the diced tomatoes and cook on low-medium heat.
- Once cooked, add the pasta directly from the pot in the pan.
- Serve with Parmegiano Reggiano or Pecorino Romano on top.
