Ingredients

  • 200g pasta
  • Olive oil
  • 1/2 Onion, 1 carrot, 1/2 cellery
  • 1 can of diced tomatoes
  • Grated Parmigiano Reggiano or Pecorino Romano

Directions

  1. Add water to a large pot and bring it to a boil.
  2. Cut the onion, carrot and cellery to make the soffritto.
  3. Once the water is boiling add table spoon of salt.
  4. Cook the pasta according to packet instructions
  5. Put olive oil in the pan and cook the onion, carrot and cellery.
  6. Add the diced tomatoes and cook on low-medium heat.
  7. Once cooked, add the pasta directly from the pot in the pan.
  8. Serve with Parmegiano Reggiano or Pecorino Romano on top.
