Romazava is a traditional Malagasy stew made with beef and a variety of greens.

Ingredients

  • 1 pound beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup water
  • 1 bunch collard greens, stemmed and chopped (or 2 cups frozen collard greens)
  • 1 bunch turnip greens, stemmed and chopped (or 2 cups frozen turnip greens)
  • 1 bunch mustard greens, stemmed and chopped (or 2 cups frozen mustard greens)
  • 1 cup coconut milk
  • 1/4 cup chopped fresh cilantro (optional)

Directions

  1. Heat the oil in a large pot over medium heat. Add the beef and cook until browned on all sides, about 5 minutes.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the cumin, coriander, turmeric, paprika, and salt and cook for 1 minute, stirring constantly.
  4. Add the tomatoes, water, and greens and bring to a boil. Reduce the heat to low and simmer for 2 hours, stirring occasionally.
  5. Stir in the coconut milk and simmer for an additional 15 minutes.
  6. Garnish with cilantro (if using) and serve hot.
