A sweet and savory stew with shrimp and a bit of spice. Adaptation from my grandmother's recipe.
|
|
|
|
- ⏲️ Prep time: 2 hrs
|
|
- 🍳 Cook time: 1-1.5 hrs
|
|
- 🍽️ Servings: 8
|
|
|
|
## Ingredients
|
|
|
|
- 2 cups Green Bell Pepper, diced
|
|
- 1 5-inch Yellow or White Onion, diced
|
|
- 2 cups of Celery, diced (try to get one with lots of green leaves)
|
|
- 1/4 cup of olive or cooking oil
|
|
- 1 cup Heinz chili sauce (it looks like ketchup but is not)
|
|
- [optional] 3 tbsp Frank's RedHot sauce
|
|
- 1 cup of seedless Golden Raisins
|
|
- 1 cup of Slivered Almonds
|
|
- 3x 14.5oz cans of diced tomato - optionally blend one
|
|
- 1 teaspoon each: pepper, thyme, salt
|
|
- 2 tsp curry powder
|
|
- 1/2 cup parsley
|
|
- 2 lb cleaned and shelled shrimp
|
|
- cooked white rice
|
|
|
|
## Directions
|
|
|
|
1. Sauté raw vegetables in oil
|
|
2. add remaining ingredients **except shrimp**
|
|
3. simmer 1 hour
|
|
4. Add shrimp and cook for 5 minutes
|
|
5. Serve over cooked rice
|
|
6. [optional] Best if cooked a day ahead and reheated.
