- 🍳 Cook time: 45 min.
- 🍽️ Servings: 5
## Ingredients
- 1 lb chicken, cut into serving pieces
- 1 cup pineapple chunks
- 1 cup pineapple juice
- 2 chopped carrots
- 1 red bell pepper, sliced
- 1 chopped onion
- 3 cloves garlic, minced
- 1 cup evaporated milk (optional for creamy version)
- 2 tbsp fish sauce
- Salt and pepper to taste
- 2 tbsp cooking oil
## Directions
1. Heat cooking oil in a pan and sauté onions and garlic until fragrant.
2. Add chicken pieces and cook until lightly browned.
3. Pour fish sauce and stir for a minute.
4. Add pineapple juice and simmer for 1520 minutes until the chicken becomes tender.
5. Add carrots and pineapple chunks, then continue cooking until vegetables soften.
6. Pour evaporated milk for a creamy texture (optional).
7. Add bell peppers and season with salt and pepper.
8. Simmer for another 35 minutes and serve hot.
## Notes
✨ For a richer flavor, let the chicken absorb the pineapple juice longer before adding milk.
🍚 Best served with warm rice and an ice-cold drink.
