Swedish Potato Pancakes |

Ingredients
- 2 large potatoes
- 1/2 medium onion
- 1 egg
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter or oil, for frying
Directions
- Grate the potatoes and onion using a cheese grater or food processor.
- In a large bowl, combine the grated potatoes, onion, egg, flour, salt, and pepper. Mix until well combined.
- Heat a large, heavy skillet over medium heat. Add the butter or oil to the skillet and let it melt.
- Drop spoonfuls of the potato mixture into the skillet, using about 2 tablespoons of mixture per pancake. Flatten the pancakes slightly with the back of a spoon.
- Cook the pancakes for about 3-4 minutes on each side, until they are golden brown and crispy.
- Repeat with the remaining potato mixture, adding more butter or oil to the skillet as needed.
- Serve the pancakes hot, with sour cream and lingonberry jam, if desired. Enjoy!
