A comforting Filipino classic with tender chicken simmered in sweet pineapple goodness, best enjoyed with hot steamed rice and shared with family.

## Ingredients
|
||
|
||
- 1 lb chicken, cut into serving pieces
|
||
- 1 cup pineapple chunks
|
||
- 1 cup pineapple juice
|
||
- 2 chopped carrots
|
||
- 1 red bell pepper, sliced
|
||
- 1 chopped onion
|
||
- 3 cloves garlic, minced
|
||
- 1 cup evaporated milk (optional for creamy version)
|
||
- 2 tbsp fish sauce
|
||
- Salt and pepper to taste
|
||
- 2 tbsp cooking oil
|
||
|
||
## Directions
|
||
|
||
1. Heat cooking oil in a pan and sauté onions and garlic until fragrant.
|
||
2. Add chicken pieces and cook until lightly browned.
|
||
3. Pour fish sauce and stir for a minute.
|
||
4. Add pineapple juice and simmer for 15–20 minutes until the chicken becomes tender.
|
||
5. Add carrots and pineapple chunks, then continue cooking until vegetables soften.
|
||
6. Pour evaporated milk for a creamy texture (optional).
|
||
7. Add bell peppers and season with salt and pepper.
|
||
8. Simmer for another 3–5 minutes and serve hot.
|
||

## Notes

||
✨ For a richer flavor, let the chicken absorb the pineapple juice longer before adding milk.
