This traditional Malagasy dish is a simple yet flavorful combination of rice and greens, cooked in coconut milk and seasoned with aromatic spices.

Ingredients
- 1 cup long grain rice
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground paprika
- 1/2 teaspoon salt
- 1 cup water
- 1 cup coconut milk
- 1 bunch collard greens, stemmed and chopped (or 2 cups frozen collard greens)
- 1/4 cup chopped fresh cilantro (optional)
Directions
- Heat the oil in a large pot over medium heat. Add the rice and cook until lightly toasted, about 5 minutes.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the cumin, coriander, turmeric, paprika, and salt and cook for 1 minute, stirring constantly.
- Add the water, coconut milk, and collard greens and bring to a boil. Reduce the heat to low and simmer for 45 minutes, stirring occasionally.
- Garnish with cilantro (if using) and serve hot.
