Jollof rice is a flavorful and aromatic West African dish made with rice, tomatoes, and a variety of spices. It's a staple at parties and gatherings and is often served with grilled meat or fish.

Ingredients
- 1 cup long grain rice
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced (optional)
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1 (14.5-ounce) can diced tomatoes
- 2 cups water
- 1 cup tomato sauce
- 1/4 cup chopped fresh cilantro (optional)
Directions
- Heat the oil in a large pot over medium heat.
- Add the onion, garlic, and jalapeno (if using) and cook until the onion is translucent, about 5 minutes.
- Add the cumin, coriander, paprika, turmeric, and salt and cook for 1 minute, stirring constantly.
- Add the tomatoes, water, and tomato sauce and bring to a boil. Reduce the heat to low and simmer for 45 minutes, stirring occasionally.
- Garnish with cilantro (if using) and serve hot.
