- 1/2 lb Beef, cut into strips
|

- 2 Tbsp Vegetable Oil
|

- 1 Tbsp Ginger, minced
|
||||
- 2 cloves Garlic, minced
|
||||
- 1 cup Carrots, sliced
|
||||
- Snow Peas
|
||||
- Bean Sprouts
|
||||
- 1 cup Broccoli Pieces
|
||||
- 1/2 cup Beef Bouillon
|
||||
- 1 Tbsp Corn starch
|
||||
- 1 Tbsp Soy Sauce
|
||||
|
||||
## Directions
|
||||
|
||||
1. Heat oil, add beef and stir-fry until meat is browned and push to sides of pan.
|
||||
2. Add broccoli and carrots. Cover and steam vegetables until they are only slightly crunchy.
|
||||
3. Remove vegetables to a bowl. Add bouillon, salt and pepper to meat.
|
||||
4. Combine corn starch, 2 Tbsp water, and soy sauce. Add to meat to thicken sauce.
|
||||
5. Add vegetables and heat. Serve over rice.

## Ingredients

- 1 cup Lentils
|
||||
- 1 cup Elbow Macaroni
|
||||
- 2 Fresh Chili or Bell Peppers
|
||||
- 2 Tbsp Lime Juice
|
||||
- 1 1/2 cup Regular Rice
|
||||
- 3 Tbsp Oil
|
||||
- 2 medium Tomatoes, chopped
|
||||
- 1 large Onion, diced
|
||||
|
||||
## Directions
|
||||
|
||||
1. Place lentils in a saucepan and cover by 1" or more of water. Turn heat to high and bring to a boil, then turn down heat to simmer, and cook covered for 35 minutes or until tender. Drain and transfer to a large bowl. Set aside.
|
||||
2. Bring 3 cups of water to a boil, add rice. Turn down to simmer for 20 minutes and fluff up rice with a fork and add to lentils.
|
||||
3. Boil 2 quarts of water, add elbow macaroni and cook until tender. Add to lentils.
|
||||
4. In a small skillet add 1 Tbsp of oil and saute chopped peppers finely for two minutes. Add the tomato, 1/2 cup of water, bring to a boil and simmer for 5 minutes. Add the lime juice. Fold this sauce into the lentils.
|
||||
5. In another skillet heat 2 Tbsp oil, add onions and saute until brown. Garnish lentil mixture with the browned onions.

- 3 Tbsp Olive Oil, divided

- 4 cloves Garlic, crushed

- 3 tsp Soy Sauce, divided

||||
- 1 tsp Salt
|
||||
- 1/2 tsp Liquid Smoke
|
||||
- 1/2 tsp Cayenne Pepper
|
||||
- 1/4 tsp Black Pepper
|
||||
- 1 lb Chicken Breasts or Skirt Steak, bones/skin removed
|
||||
- 2 Tbsp Water
|
||||
- 1 large Spanish Onion, thinly sliced
|
||||
- 1/2 each Green, Red, and Yellow Bell Pepper, thinly sliced
|
||||
|
||||
## Directions
|
||||
|
||||
1. Combine 1/4 cup lime juice, 2 Tbsp of the oil, garlic, 2 tsp soy sauce, the salt, liquid smoke, cayenne pepper, and black pepper in a resealable container, add chicken/steak, cover, and refrigerate for at least 2 hours or overnight.
|
||||
2. Combine water, remaining soy sauce and lime juice, and a dash of salt and pepper - set aside.
|
||||
3. Grill meat over a medium-high flame for 4-5 minutes per side, or until cooked through.
|
||||
4. Cut meat into thin strips - set aside and keep warm.
|
||||
5. In a large skillet over medium-high heat, cook onion and peppers in remaining oil until brown - remove from heat and pour reserved liquid mixture over onions and peppers.
|
||||
6. Toss together meat, onions, and peppers.
|
||||
7. Can serve with warm tortillas, pico de gallo, cheese, sour cream, and guacamole.

1. Preheat oven to 350F. Butter a 1.5 quart baking dish.

||||
2. In a medium bowl, combine the potatoes, butter, eggs, onion, salt, and paprika. Mix well.
|
||||
3. Place potato mixture into the prepared baking dish and pour milk over top. Bake in the preheated oven for 40 minutes. Sprinkle top with cheese, return to oven until cheese melts and is slightly browned.

- 1/2 cup Bread Crumbs

- Cooking Spray

## Directions

||||
1. In bowl, place all ingredients except spray and using 3/4 cup of the salsa - mix well.
|
||||
2. Spray a loaf pan (approx. 5"x9"), and add above mix.
|
||||
3. Bake for 50 to 60 minutes - sit 15 minutes.
|
||||
4. Top with last 1/4 cup of salsa.

14 ounces Smoked Salmon, chopped

||||
2 tsp Fresh Chives, chopped
|
||||
1 clove Garlic, chopped
|

2 tsp Fresh Basil, chopped
|
||||
5 whole Eggs
|
||||
1 cup Milk
|
||||
1 cup Whipping Cream
|
||||

## Directions

||||
1. Combine all pastry ingredients in a food processor (mix flour and butter, then add water gradually while mixing).
|
||||
2. Gather into a ball, cover with plastic wrap and chill 1 hour.
|
||||
3. Saute onion until shiny in the butter.
|
||||
4. Stir in salmon, chives, garlic, and basil. Cool.
|
||||
5. Preheat the oven to 400F.
|
||||
6. Roll out the dough to fit a 10" tart pan. Prick with a fork.
|
||||
7. Arrange the salmon mixture in the pre-baked tart shell.
|
||||
8. Whisk eggs with milk and cream, season with pepper and pour in the tart shell.
|

9. Bake about 30 minutes at 325F, until puffed and golden.

1. Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes.
|
||||
2. Drain any excess water, if necessary, and squeeze dry.
|
||||
3. Combine the salad ingredients (all but the oil, lemon juice, salt and pepper dressing ingredients) in a medium bowl.
|
||||
4. Mix the dressing ingredients together and stir into the salad mix
|
||||
5. Serve chilled or at room temperature.

- 10 oz Precooked Thick Wheat Noodles
|
||||
- 3 Tbsp Soy Sauce
|
||||
- 2 Tbsp Oyster Sauce
|
||||
- 2 tsp Sesame Oil
|
||||
- 2 Tbsp Peanut Oil or other suitable frying oil
|
||||
- 6 oz Firm Tofu, cut into cubes
|
||||
- 1 Carrot, julienned
|
||||
- 2 cups Small Broccoli Florets
|
||||
- 2 cloves Garlic, minced
|
||||
- 2 tsp Ginger, finely grated
|
||||
- 1/2 cup Roasted Cashews
|
||||
|
||||
## Directions
|
||||
|
||||
1. Loosen the precooked noodles by soaking in a bowl of hot water for 2-3 minutes, then drain and set aside.
|
||||
2. Mix together the soy sauce, oyster sauce, sesame oil and 2 Tbsp water in a bowl.
|
||||
3. Heat a wok or large frying pan over a high heat, add the oil and stir-fry the carrot and broccoli for 2 minutes.
|
||||
4. Add the tofu and stir-fry for 4 minutes.
|
||||
5. Add the garlic and ginger and stir-fry for a minute.
|
||||
6. Stir through the noodles and then add the sauce mixture and cashews and mix until thoroughly combined and heated through.
