A sweet and savory stew with shrimp and a bit of spice. This is adapted from my grandmother's recipe and is different from the usual recipes found on the web.

  • ⏲️ Prep time: 2 hrs
  • 🍳 Cook time: 1-1.5 hrs
  • 🍽️ Servings: 8

Ingredients

  • 2 cups Green Bell Pepper, diced
  • 1x 5-inch Yellow or White Onion, diced
  • 2 cups of Celery, diced (try to get one with lots of green leaves)
  • 1/4 cup of olive or cooking oil
  • 1 cup Heinz chili sauce (it looks like ketchup but is not)
  • [optional] 3 tbsp Frank's RedHot sauce
  • 1 cup of seedless Golden Raisins
  • 1 cup of Slivered Almonds
  • 3x 14.5oz cans of diced tomato - optionally blend one
  • 1 teaspoon each: pepper, thyme, salt
  • 2 tsp curry powder
  • 1/2 cup parsley
  • 2 lb cleaned and shelled shrimp
  • cooked white rice

Directions

  1. Sauté raw vegetables in oil
  2. add remaining ingredients except shrimp
  3. simmer 1 hour
  4. Add shrimp and cook for 5 minutes
  5. Serve over cooked rice
  6. [optional] Best if cooked a day ahead and reheated.
